i went to the store at midnight with an inspiration to make some mac and cheeese bought all the goodies... about 22 dollars spent i'm not really that hungry, it's just great making it homemade... knowing how good it tastes it's in the oven now panko crust gettin crispy then before i know it pow... i'll have this whenever i want to eat it this is where college roommates would come in handy too much for one man

you panko crust it? WTF dude, mac and cheese is supposed to be cheep cheap!
Download this EP I made. The songs are pretty close to where they should be. I colaborated with Brian Wilson and Thom Yorke and then we all fucked in my basement apartment. Thom has a really big dick suprisingly, and Brian Wilson cried the whole time, yelling "These moans are not in perfect harmonic unison". Anyway, it sounds like what you would imagine something from that situation sounds like.

Mmm. I saw how they make it at T-Rex BBQ. Next time I make some, I'ma give that method a try (hint: broil 5 minutes tops).

still haven't tried mac n cheese with tuna fish. maybe if it rains this weekend.

This thread is timely, I was watching "Good Eats" the other day and Alton Brown made two versions of home made Mac and Cheese. One version was for grown ups, (some grilled onions thrown in there, baked with the Panko bread crumbs) Looked so good. The second version was a little more for the kids, but still home made it tasted more like the "blue box".

My favorite Mac & Cheese (Stolen From Good Eats) 1/2 pound elbow macaroni 3 tablespoons butter 3 tablespoons flour 1 tablespoon powdered mustard 3 cups milk 1/2 cup yellow onion, finely diced 1 bay leaf 1/2 teaspoon paprika 1 large egg 12 ounces sharp cheddar, shredded 1 teaspoon kosher salt Fresh black pepper Topping: 3 tablespoons butter 1 cup panko bread crumbs Preheat oven to 350 degrees F. In a large pot of boiling, salted water cook the pasta to al dente. While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf. Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese. Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving. Remember to save leftovers for fried Macaroni and Cheese. If there happens to be any left... Ashy Larry, Did you see the episode of Good Eats on Wednesday night where Altin Brown was making mac 'n cheese from scratch? Is that what inspired you to do this? If so, it sort of inspired me, too, except I have very poor cooking skills. His deep fried mac 'n cheese looked pretty drop dead amazing.

Mac & Cheese Toasts (Likewise Stolen From Good Eats)

Leftover baked macaroni and cheese, refrigerated for at least overnight
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cayenne
1 egg beaten with 2 ounces water
1 cup panko bread crumbs
Oil for deep frying, preheated to 375 degrees

Cut refrigerated macaroni and cheese into slices or bite size pieces.

Season the flour with salt, pepper and cayenne. Dredge each piece through the flour and gently tap off excess. Dip in the egg wash and then coat with the bread crumbs. Allow them to rest for 5 minutes so the crust can set. Very carefully drop into the oil and fry until golden brown. Remove to a baking sheet fitted with a rack and rest for 2 minutes before serving.

Yes, keep posting recipes for mac and cheese. Although I can only do this stuff on rare occasions it may be fun to make some of these once the cold weather comes round. This stuff's too heavy for summertime eating. Though I love the stuff and really haven't tasted a recipe I don;t like.

as for inspiration... yes my man alton got me in the mood my recipie make a light roux add 2/3 milk 1/3 chicken stock (that's the secret) melt in cheese for this i used 2/3 extra sharp chedder 1/3 velveeta (makes the creamy creamy) boiled some large shells baked in a shallow pan for max crunchy topping with buttered panko was gonna add gruyere (sp?) but didn't want to spend the extra 10 bucks on it.... but i recommend bake for 1/2 hour for variations plate to plate... add a sprinke of garlic powder a dash of tapatio or any other hot sauce i'm a velveeta shells and chese guy out of the box also kraft deluxe ain't too bad
