Rockin' Bones is a Rhino box set dedicated only to rockabilly. Like a lot of Rhino boxes, it tries to have it both ways by combining hits/staples with a lot of rarities and obscurities. Still, pretty comprehensive if you're into this sort of thing.
The Atlantic Unearthed collections are rare and unreleased songs from Atlantic/Atco's golden age of soul (1964-73 or so). Some of the big names (Otis, Aretha) are represented by b-sides and the like. Really solid.
